In this 3-week, hands-on series, F&B Chef Anthony Schulz will cover the classic techniques of seafood preparation, working with various shapes and textures of fish, such as halibut, skate and blue Marlin. Participants will start with the basics—such as making flavorful stock and filleting fish— and progress weekly to more sophisticated preparations. You will prepare multiple dishes with each fish each week to understand the versatility of each one. All participants will end the three week series with the confidence to create their own fish masterpieces at home. You will also learn to use our wood-fired oven to impart some smoky flavors to your dishes! Recipes may include: classic fish piccata, puttanesca (with blue marlin), and halibut provençal.
You'll enjoy the fruits of your labor each week with a beautiful meal in the cafe space. This series is BYOB, so please bring your favorite wine to enjoy with your meal.
This is a 3-week cumulative series, held on 3 consecutive Wednesday evenings, (September 12, 19, and 26). Now seat price includes all sessions. Please bring an apron with you to class. F&B classes are BYOB, you are welcome to bring any beverage you'd like to enjoy with your meal and we will provide all glassware and ice.
