Our first January Subscription Bread is an Everything Sourdough, the crust loaded with sesame, poppy, flax and fennel seeds. Our baker informed us it's his favorite bread for avocado toast.
From those of us in the bakery today, here are our favorite variations on avocado toast.
1.The Purist— Our baker slices this bread and browns it on both sides in olive oil in a cast-iron pan, tops it with ripe, sliced avocado, a dash of cayenne, salt and pepper.
2. The Classic— Toasted sourdough bread with ripe avocado thinly sliced and layered (not mashed), drizzled with your favorite fruity olive oil, Maldon or other sea salt (when your ingredients are so simple, the salt makes a big difference), black pepper, a splash of fresh lemon juice, and a dash of dried red pepper flakes
3.. Goat Cheese and Chive—Toasted, seeded sourdough with ripe avocado, mashed and lightly salted, topped with crumbled goat cheese, olive oil, fresh chives, and black pepper.
4.. Japanese-Inspired- Toasted, seeded sourdough bread with ripe avocado thinly sliced and layered (like in the image), topped with a drizzle of olive oil and furikake rice seasoning.
5.. The Salad- Ripe avocado, sliced then smashed, drizzled with your best olive oil (#fatonfat!), Trader Joe's Everything Bagel Seasoning, sea salt, black pepper, and arugula or micro greens (like in the image) tossed with a little olive oil and more sea salt.
